The tails start once the alcohols with lower boiling points has all evaporated. You have to estimate the amount of alcohol you should get from the batch. When you get near to that amount, start tasting.

A Thumper helps separate elements that will boil off. You can not make cuts based on temperature. You have to rely on your nose and taste. A taller slender design is best to help cool the distillate vapors.

Neutral spirit types of alcohol need filtering and are most often produced in a continuous still. The purpose of a pot still is to bring the flavors over to the resulting liquid. Any flavoring to neutral spirits is is infused in a "Gin Box" right before the steamed vapor is condensed, or it is added (infused) to already distilled spirits.
A fractionating distillation column is the best solution for making strong alcohols. Such a column can produce pure 95% alcohol in one operation. Called a forced reflux still. Unlike pot stills, reflux stills are designed to create higher proof with little to no flavor alcohol. Inside the still is a column that allows the reflux of liquid to help condense the rising vapor and increase the efficiency of distilling, thus increasing purity. The taller the column and the more reflux liquid will occur and the more neutral the alcohol will be.
