YELLOW BEET GIN

These days, gins from around the world are being crafted with a vast array of herbs, spices, fruits, and vegetables, but, as far as we know, no one is using the beet!

25 oz. London dry gin

2 fresh beets

1. Wash beets.

2. Slice beets.

3. Place beets in bottom of infusion jar. You may also choose to skewer the slices and stand them up in the jar.

4. Add gin and seal the jar.

5. Let infuse for 3–14 days out of direct sunlight, tasting and gently stirring regularly.

6. Strain the gin into a clean bottle and cap.

TIP

Try to find fresh beets that are firm with a deep golden hue.
