HABANERO PEPPER TEQUILA
After your infusion has reached the desired spice intensity, rack or strain the liquor and concoct some spicy margaritas. For the extremely brave, a fresh habanero ring may be used as a garnish.
25 oz. tequila
3 habanero peppers
1. Wash habanero peppers.
2. Slice pepper tops off, and cut in half lengthwise.
3. Remove all seeds, but leave the ribbing.
4. Place the halved peppers in bottom of infusion jar.
5. Add tequila and seal the jar.
6. Let infuse for 3 days or more in a cool place out of direct sunlight, tasting and gently shaking regularly until desired intensity is reached.
7. Strain the tequila into a clean bottle and cap.
