CITRUS LOVERS’ INFUSED GIN

25 oz. grain spirit or vodka

1/4 cup juniper berries

1/8 cup coriander seeds

1 fresh lemon (peel)

1 fresh orange (peel)

1. Using a paring knife or vegetable peeler, peel the lemon and orange, making as many 1-inch-wide strips from the peel as possible.

2. Place all ingredients in the bottom of the infusion jar.

3. Add spirit and seal the jar.

4. Let infuse for 3–14 days out of direct sunlight, tasting and gently stirring regularly.

5. Strain the spirit into a clean bottle and cap it.

TIP

When peeling the citrus fruits make sure to use only the outer layer of the peel and not the white pith portion, which is very bitter.
